KINGSCOTE, South Australia, March 31, 2026 — The Kangaroo Island Ligurian Bee Co., double winner at the 2025 South Australian Premier’s Food and Beverage Industry Awards, has released a new seasonal range of Kangaroo Island honey alongside an expansion of its online store, giving customers across Australia direct access to raw honey from the world’s last pure Ligurian bee population.

The seasonal varieties reflect shifting nectar flows from the island’s native vegetation. Each batch carries distinct floral characteristics depending on what is in bloom at the time of harvest, with flavor profiles ranging from light and herbal through to deeper, more robust notes. The company describes these natural variations as a defining feature of place-based honey production, and each jar is tied to a specific named location and bloom source rather than blended from multiple origins.

Kangaroo Island has operated as a protected bee sanctuary since 1885, making it home to the world’s last genetically pure population of Ligurian bees. Strict biosecurity measures and the island’s geographic isolation from the Australian mainland prevent hybridization and disease transmission, contributing to the consistency and purity of honey produced there. Over 800 hives are moved around the island according to the flora and seasons, with beekeepers carefully selecting apiary sites to capture each native bloom.

The Kangaroo Island Ligurian Bee Co. was founded in 2001 by certified organic beekeeper Peter Davis. The business is now run by his son Brenton Davis and daughter-in-law Verity Hayman, who continue the family’s chemical-free beekeeping practices across more than 80 years of Davis family beekeeping on the island.

“The bees and the island do most of the work,” said Verity Hayman, Managing Director, Kangaroo Island Ligurian Bee Co. “Our job is to protect the environment they depend on and handle the honey as little as possible so the flavor stays true to the season.” Brenton Davis, who manages the hives across the island, added: “Each seasonal release is different because the island itself is different season to season. That variation is what makes it worth paying attention to.”

All honey in the range is raw and unprocessed, with no additives, blending, or heavy filtration. This approach preserves the natural enzymes, aroma, and texture that distinguish single-origin raw honey from commercially processed alternatives. Production follows certified organic standards, with chemical-free hive management designed to support colony health and the surrounding habitat.

Beyond honey, the seasonal release includes traditional honey mead, produced in partnership with Maxwell Wines, a South Australian meadery with over 50 years of experience, and beeswax candles made from certified organic beeswax with a pure cotton wick. Both products carry no synthetic additives, fragrances, or fillers.

Traceability is a central part of the brand’s positioning. Each product is tied to a named producer, a specific island location, and a protected bee population, distinguishing it from honey labeled simply as “packed in Australia” without a clear origin.

The company’s physical store, Island Beehive at 59 Playford Highway, Kingscote, remains open daily from 9am and offers visitors the opportunity to learn about Ligurian bees, sustainable extraction methods, and the island’s beekeeping heritage. Guided factory tours and beekeeping experiences are available on site.

With the 2025 award recognition behind them and a growing direct-to-consumer channel now open, Brenton Davis and Verity Hayman say the focus for 2026 is bringing the Kangaroo Island story to more Australian households.
